Have you sent in your tax returns? You need to provide them anyway and that has your address on them.

Yes, I have my copies that the accountant gave me. Will those count then, as evidence? If so that's great

Yes! This is great advice! I think I may have sent those too.... It's proof that you filed as a non-US resident.
