Cabbage recipes
« on: February 16, 2012, 08:37:45 AM »
Anyone have favourite cabbage recipes?  We were sent 2 heads this week in our veg box.  I usually struggle to figure out what to make with one, and 9 times out of 10, I end up making coleslaw.  I'd make sauerkraut if I had a big jar.  Not in the mood for plain boiled cabbage/boiled dinner or really up to stuffed cabbage.  Any suggestions?

Also, my house smells of cabbage. :(

Adding it to a stir-fry was the first thing I thought of.  Just cut into narrow strips, the thinner the better so it cooks through.

The other thing I used to do when we used to get a veg box (don't get one any more because we kept getting too much of stuff we didn't really want like potatoes and cabbage!), is to add it to a stew or something like a veggie (or meat-based) chilli.  Just chop it up really small and throw it in and let it simmer with all your other ingredients.  Use loads of it.  You won't even know it's there!  It'll make your stew / chilli a bit thicker and the taste may be a bit sweeter.  A great way to disguise it and use it up (healthy, too!)

I had the same problem yesterday! I still had a head of cabbage from last week's box, and got another one yesterday. I used up a whole one last night by cutting it up into chunky pieces and sauteeing with onions in butter with salt and pepper. At the end I added some smoked sausage and we had it with baguette. It was really simple and very nice!

My Slovak side is also telling me to make this:

I grew up on it. My mom made it really simply though - we never added sugar or caraway seeds. Just make sure that the cabbage gets nice and browned towards the end of cooking. It can take a long time.

Like Andee said, I always add some into a stir fry when I have cabbage sitting in the fridge, or into soup. I've even baked it in foil. It's a pretty easy ingredient!

Oh yes, cabbage grows well in Scotland therefore, I have been inundated with cababge from the allotment.  It does get boring after a while!

I too add to stir fries.
Sauteed with caroway seeds
Sauteed with leeks and nutmeg
Braised with raisins
Potato and cabbage soup
Sauteed cabbage and bacon

My mom's version of 'Bubble and Squeak' is amazing- its cabbage, onions, bulk sausage meat (could just cut up regular sausages), caroway seeds in a cream sauce. Over potatoes or rice or toast. Not the healthiest of food, but man its good!

This creamy lemon and cabbage pasta is amazing as well

This Gujarati cabbage with coconut and potato looks awesome as well

Hopefully you can find something to work out  :)

Cole slaw? Maybe it's not the right time of year for that, but we like it even in the winter with some oven barbecued chicken legs and mashed potato.

I have the recipe for you...its delish! I addedd some vinegar and sugar to make it more sweet and sour, and I added a handful or raisins to make it more like the stuffed cabbage I grew up with

Thanks for all the suggestions!  I think I am going to go with this one over the weekend (with Quorn mince instead of beef) and do a slightly modified cabbage and noodles tonight to go with the fresh salmon we have.

I like cabbage, but with the veg box, we get a head every week during the winter.  I thought they were having a laugh when I saw two yesterday.

I used to make a Weight Watcher's recipe veggie soup that called for lots of cabbage. It's very filling and very low calorie (and also freezes very well). It's basically just lots of veggies and a veggie broth.

Also, dumplings. I've never made them but an old roommate used to when I got tons of cabbage in my CSA share.
