I got a bit excited at seeing Provolone cheese in Morrisons the other day, especially as I have looked for it in proper cheese shops and have never been able to find it.
But... maybe I am the only one who didn't know this? Provolone comes in 2 different varieties... Piccante and Dolce. The stuff I bought from Morrisons was the Piccante type, and I guess the type I grew up eating in the US was the Dolce type, because the Morrison's stuff was BEYOND grim and nothing like what I remembered provolone to be!

Provolone Piccante (piquant), aged for a minimum of four months and with a very sharp taste, to Provolone Dolce (sweet) with a very mild taste. In Provolone Piccante, the distinctive piquant taste is produced with lipase (enzyme) derived from goat. The Dolce version uses calf's lipase instead.
So... learn from my mistake, guys!
