German chocolate cake frosting
« on: September 24, 2004, 08:18:07 AM »
Does anyone have a surefire recipe for German chocolate cake frosting? I ordered a mix for the cake from a company that sells American products here, but they don't carry the frosting for it. There are a lot of recipes on the Internet, but I was just wondering if anyone on here has a "tried and true" concoction, before I randomly pick one from the net and it sucks. Thanks!

I don't have a recipe, but I want to thank you for the new obsession I'll have until I get to the States for my brother's wedding in 5 weeks. !! *LOVE* German Chocolate Cake.

Ooooh, yum! Can I have some?

When I need a recipe I don't want to 'risk', I usually go to www.epicurious.com. Their recipes are rated with lots of comments and they originally come from places like Bon Appetit and Gourmet Magazine.

Thanks for the link, balmer!

And Marlespo, bring a lot of frosting back with you! :)

I haven't had German chocolate cake in ages myself, and my husband's never tried it, so I want to make sure it's not a bomb when I make it, especially since I've been telling Andrew how fantastic it is. Must...make...perfect...cake. My contribution to the domestic arts. :)

I have a notebook, handwritten by my mom, with all her recipes. She was an old style cook, and everything she made was outstanding.

I found her German Chocolate Cake topping recipe. It's quite simple.

1 cup evaporated milk (carnation)
1 cup  brown sugar
3 eggs
1 cup coconut
1 cup finely chopped pecans
1/2 cup butter (the real stuff)
1 teaspoon vanilla

mix

cook and stir over medium heat until it begins to thicken, which should be about 10 to 12 minutes. Remove and job done

I used to have her make this for me, even without the cake,,LOL. Was my favorite cake growing up. It should come with a calorie warning tho,,LOL

She also used this topping for her Oatmeal Cake, which, now that I have dug up this notebook, I am going to have to try making for the first time  :D

Thanks for the recipe, tebs. If you ever need any tips on boiling eggs or making toast, let me know. :) Actually, I'm a fairly decent cook.

I need my mother to give me her recipes. She'll be 78 in a few days, and was recently diagnosed with Alzheimer's. We've talked many times over the years about her writing them all down for me, but haven't gotten around to it, as if there's all the time in the world. But now there's a heartbreaking urgency to it.

(And no, for some on this link, getting her recipes is not my main concern--I can just foresee what I wrote being twisted that way. She's my best friend, and her recipes will be something of her I can keep.)

Anyway, your recipe sounds great. It sucks that Andrew declared himself on a diet a few days ago, because, as you pointed out, German chocolate cake isn't exactly THE food for slimming down. But I'm sure he'll make an exception. :)

I'm in the same position Suzanne, though my mother is younger, but now in her 2nd bout of cancer I feel the same urgency. Seems silly maybe, but when she dies (as I assume she isn't immortal, though she is full of surprises!) some day, making those recipes of hers will be a way of connecting with her. There are so many recipes of hers that I've been meaning to get for ages: her own magical versions of zucchini bread, meatloaf, seven layer bars, blueberry muffins, etc... but every time I visit it ends up at the bottom of the list. What I need to do is just raid her recipe box, sit on the couch, and type them uip on a laptop while she's talking to me!!

Aww Suzanne,, I am sorry to hear that.  My mother also suffered from some form of dementia, and then also had a very bad stroke that really took her mental abilities away. So I really do treasure this handwritten notebook. Before her stroke, she had lost the ability to write anything at all.  I wish she had written some of her other recipies in there,, or that I had paid better attention to some of her cooking.  In particular, her pickled peaches were fastastic, and I have no idea how she did them.
