I heard that lamb hearts are very good especially as a casserole. I saw this recipe and was wondering if there are other ideas for cooking lamb hearts?

Canterbury Casserole
Ingredients
2 Lambs hearts
2 tbsp Flour
Salt and Freshly ground black pepper
1 Onion, chopped
1 Leek, chopped
1 Carrots, sliced
2 sticks Celery, sliced
1/2 small Swede, diced
300ml Beef or Vegetable stock
2 Bay leaves
1 tbsp Fresh mint, chopped
1 tbsp Fresh rosemary, chopped
1 tbsp Cornflour
Method
Dice the lambs hearts removing any tough material.
Mix the flour and seasoning together and coat the meat in the flour.
Fry the seasoned meat in the casserole dish over a high heat for 5 minutes, or until browned on all sides.
Add the vegetables to the dish, along with the stock and herbs.
Place the covered casserole dish into an oven at 170 degrees C and cook for an hour and a half, stirring occasionally.
Mix the cornflour with a little water, and stir into the casserole.
Return the casserole to the oven for a further 20 minutes, and serve the casserole immediately with either mashed potato or herby dumplings.
