Hello guys,
It's been a few weeks since I posted anything, so I'd thought I'd let you guys know whats been going on. I still haven't started the Visa application process, which I planned to start in December, and it looks like I will have to wait a little longer. My UK partner's job is ending within the next couple weeks due to his employers leaving the country which means that he will be unemployed.

He's currently putting his resume out there, but nothing permanent has come about, yet. You can imagine my frustration when he told me this. Oh well, what are you gonna do?

Back in the US, I have been unsuccessful in achieving a part-time job for extra income. Many retail stores in NYC close too early for me to work there since I wouldn't be able to start until 5pm and the few places that called me back for interviews didn't materialize. Not really a big deal, but extra cash would've looked good on my bank statements when I submitted them to the consulate. But again, what are you gonna do?
On the plus side, I get to make another trip to the UK next week (Nov. 24th) to see my partner and I've been able to get some of the paperwork together for the visa application. After several attempts (and many phone calls) with the HR department at my job, they managed to update my life insurance policy to reflect my partner as the beneficiary in case of my death. I'm not sure how this will play out when I go to the consulate because they only send you a copy of the form you fill out, not an official letter or anything (I asked). If necessary, I'll provide the number to my HR dept to have them fax it to the consulate right then and there. I also recently discovered some Western Union receipts from over the summer when my partner would send me money. I figured that might be useful information. Since my partner still has a bank account in the US, I'll ask him to send money, via Western Union, to deposit into the account.
Another thing my partner has (and I forgot about completly) is a will. He said that he will have it amended to include me because currently it still includes his ex-spouse. Since it cost $$$ to do that, we'll have to wait until his employment status looks promising again.
So, all in all, not a bad situation but more of an inconvience at a time when we were getting ready to go through with the application. I'm sure my partner will be employed full-time again soon so I try not to worry about it too much. Until then, I'll just keep gathering as much evidence as possible and look forward to my trip next week. Thanks guys for listening to my dillemma.
