Tried to use them to make ice cream sandwiches with but they are a bit crumbly (might work if leaving to sit for longer than I did LOL) so won't be ideal for somebody that prefers chewy cookies to crispier ones - but they do taste peanut buttery delicious! :) Was shocked there was no flour or anything!

I am going to have to try these; they seem way too easy!

Reminds me of the 3 ingredient pumpkin chocolate chip muffins I used to make.

1 can (15oz) pumpkin puree
1 cup chocolate chip
1 box vanilla cake mix (just the mix, don't add the cake ingredients)

Mix together, put in muffin tins and bake at 350 for about 20-25 min. Easy peasy.

You can easily get canned pumpkin in the UK too.

I actually think I have a can of pumpkin puree knocking around! I will definitely need to give that a go as I absolutely LOVE pumpkin-flavoured treats :) How'd you stumble across that recipe? Did you just decide to try it one day!? It sounds so easy but not something I'd even think to do!

I hope this thread becomes a sharing space for loads of quick and easy recipes for baked goods!

I think I happened to see it on Fb one day and my kids were into pumpkin stuff at the time, and I'm always desperate to get fruit/veg in them and I was like, no way will this work! It totally did! And it is SO easy. It's nice because it's easy to get the ingredients here too. In the US, I have used spice cake mix, but I haven't found that here. Vanilla cake works fine. Oh, I also throw in a shake or two of cinnamon sometimes (but that makes it 4 ingredients, ha!), but my DH hates cinnamon, so I don't always.

Maybe they did the cinnamon challenge, where you try to eat a teaspoon of cinnamon.  See the videos on You Tube if you like to watch people suffer.  I'd imagine that would put me off cinnamon for a while.

I've seen the videos before but I've never felt like it was anything I'd particularly want to try myself...lol

Most of his family on both sides HATES cinnamon, so I guess it's hereditary! He tells a story of getting a latte the first time he was in NYC and they sprinkled cinnamon on it and he was gagging on the sidewalk, lol.

I never heard of anyone hating cinnamon before either!
