On it's own, it really is flavourless... though it has an odd bitterness to it too. My mom used to cook it in milk when we were kids? It's kind of like a not quite cooked potato! haha. But add some flavour to it, and roast it and you get this awesome sweet nuttiness to it and whatever things you add to it to give it some flavour.
When I was a kid, if my older sister and I walked into the kitchen while my dad was peeling/chopping potatoes, we would
beg him for a piece of raw potato. I don't know why. And we were always so happy when he'd relent and give us each a small slice. It wasn't good, but I always ate it and was glad to have it. I'll never understand that, but it's a thing we did.
Anyway, yeah... cauliflower... flavourless. So I'm not mistaken in that. That's fine. I can work with flavourless. I'm happy to marinate and season it into submission. I
will learn to like cauliflower. If I can like cooked carrots, I can like cauliflower!
