You are right, there's very little fake cheese in our house except for the smoked plastic cheese
(Tesco Austrian Smoked Processed Cheese 125G)

My husband loves that stuff!  But then he found a wheel-shaped one that he likes even better...

Quote
But I digress. You are describing this :

PRÉSIDENT EMMENTAL SWISS

Pressed, hard cheese with distinctive holes and nutty, sweet flavor. Made from pasteurized milk of grass-fed cows in the northwestern region of France

A huge favourite of mine.

It melts well?  I will get some and try this.  Now I need to get some thick-sliced soft sourdough (I don't even like sourdough!) to put this all together.  Oh.  And I think there was a smear of garlic mayonnaise on it.  I remember some kind of tasty goo...

One day, I'm going to tackle Panini's overstuffed sandwich... but that's a quintessentially American thing, with all that processed meat on it, I think.  But one day... *wistful sigh*

Yeah, the best bit of that Emmantal is that it melts really nice.  It's probably not as strong as Swiss cheese you are thinking of.

Less strong is better, as I'm not convinced I like Swiss cheese.  I never have before.  :)

Didn't you say you liked the Comte?  It's practically the same stuff.
My wife despises that smoked cheese in the sausage shape.  Me and the kids love it.

We both really liked the comte, yes.  But I assume the comte is too dry and hard to melt well (I didn't actually try to melt it)... But I'll try the Emmental for my sandwich.  Thanks!

I like the smokiness of the Austrian cheese product, but otherwise, it's a little bland and a lot rubbery.  My husband finds the texture amusing.  This is the one he likes better (and the texture is slightly less rubbery!):

Same.  Exavtly the same.  I wasn't a fan of their "flame broiled" flavour.  It tasted a bit funny to me.
