Cheer-yourself-up Zucchini Cookies

As requested, here is the recipe for Zucchini(that's Courgette for some of you) cookies.  

1/2c butter/marg softened
1/2c brown sugar
1 egg
1/2t vanilla extract
1c flour
1/2t baking soda
1/4t salt
1 small zucchini (shredded)
1 cup oatmeal
1/2c raisins
3/4c shredded coconut (optional)
1/2 c butterscotch chips (I used white chocolate)

Cream together the butter and sugar.  Add the egg and vanilla and beat well.  Sift the flour,baking soda,and salt together and mix into the wet mixture.  Add the zucchini,oatmeal,raisins, coconut(if desired) and chips.  Mix thouroughly.  Drop by teaspoonful onto greased cookie sheets.  Bake at 350,gas mark 4 for 12-14 minutes.  

BUT, here is the best ever recipe for sneaking fuit into cookies.  

Chocolate chip-banana bars.

3/4 c butter/marg softened
2/3c sugar
2/3c packed brown sugar
2 t baking powder
1/2 t salt
1 egg
1c mashed banana(2-3 medium)
1 t vanilla
2 c flour
1 c chocolate chips
2/3 c chopped walnuts

Grease a 15x10x1 inch baking pan,set aside.  Beat butter/marg 30 seconds.  Add sugar,brown sugar,baking powder,and salt.  Beat til combined.  Beat in the egg, bananas, and vanilla til combined.  Beat in flour.  Beat in chips and nuts(if desired).  
Spread in baking pan.  Bake at 350,gas mark 4 about 25 minutes or till golden.  Cool. Cut into bars. Enjoy!

MMMMMMMMM!
My mom makes the best zucchini bread in the universe - but these cookies sound pretty good too! And dontcha just love saying the word "courgette" ;)

Doesn't sound like English. :-/

Thanks for sharing the recipes, 'counting.  Will try them when the weather gets cooler.  Too hot in these parts to bake this time of year.  Have to settle for store-bought cookies.
