So I'll probably do:

1. March to October payslips
2. February - october bank statements (since 10th February statement will have the beginning of march at the end of the statement)

You won’t need that many bank statements, because they will have all the dates on them (not just the 10th). You just need to provide the bank statement that covers either the March pay or the April pay deposit (depending on the date of the April payslip).

I would send:
Payslips:
[March 26 (if needed)]
April 26
May 26
June 26
July 26
Aug 26
Sept 26
Oct 26

Bank statements showing the following transaction dates:
[1-31 Mar (if needed)]
1-30 Apr
1-31 May
1-30 Jun
1-31 July
1-31 Aug
1-30 Sep
1-31 Oct

I actually just discovered on the Nationwide website I can set dates to show my statements, so I can set it from the 1st March up until the 31st October, rather than waiting on them to produce the pdf of the statement on the 10th of every month.

The only thing it shows though is my bank account name in the header. It doesn't show my name or my NI number. Is that okay? I suppose having the bank sign the statements will ensure it is my account and not someone elses.

The bank statements must show your name and address on the them, because you have to prove that it is an account held in your name.

Also, if you print them from online banking you must take them into the bank to get them stamped/signed on EVERY page anyway... which would actually be more hassle than just asking the bank to print a partial statement for you.

Printing a partial statement would take them just a few seconds, but stamping every page of 6 months of bank statements that don’t even meet the formatting requirements would be a lot more work for them! And of course they would also have to confirm your name and address too.

Oh whilst I am looking at it, do my payslips need the date signed by my employer, or do they just need his signature as authentication? The letter will be dated

If they are physically issued by the employer and handed/mailed to you then you don’t need anything.

If they are printed from online, they must be accompanied by a letter from a senior official, on letterhead paper, confirming their authenticity. This can be combined with the mandatory employer letter.

From the guidance (https://www.gov.uk/guidance/immigration-rules/immigration-rules-appendix-fm-se-family-members-specified-evidence):

(bb) Payslips must be:
(i) original formal payslips issued by the employer and showing the employer’s name; or
(ii) accompanied by a letter from the employer, on the employer’s headed paper and signed by a senior official, confirming the payslips are authentic;

And

Bank statements must:
(v) be:
(1) on official bank stationery; or
(2) electronic bank statements which are either accompanied by a letter from the bank on its headed stationery confirming that the documents are authentic or which bear the official stamp of the issuing bank on every page.

Okay thank you, just to clarify:

My bank statements and payslips will be electronic and printed.

So when the CEO signs each payslip to authentic them, does he need to date when he signed them?
The letter from my employer will be dated on the day he signs it.

Likewise, with the official bankstamp from Nationwide, does it need the date on each of the pages them stamp?

The CEO is not supposed to sign the payslips, he must write a letter confirming their authenticity, as per the instructions from the guidance above.

Again, the exact instructions are in the bank statements guidance above:

either accompanied by a letter from the bank on its headed stationery confirming that the documents are authentic or which bear the official stamp of the issuing bank on every page.

My spouse asked on her post about the supporting documents we need and I think @ksand24 suggested(?) it may be a good idea to have a letter from my roommate to say he is happy for her to stay?

Just drafted one which he is happy to sign. If i could get a second set of eyes on this that would be great :)

Oh also, I plan to get an authenticated copy of my passport today!

It seems the Post Office can do this? Can anyone verify they are the best or least the recommended way to do this

That's the easiest and cheapest way and most people get it done that way.

Also, would you have any thoughts about the draft letter for my room mate?

I'd actually say that is too detailed a letter from the roommate, because they don't have the authority to allow your spouse to live there (only the landlord can do that) and overcrowding is not relevant to them either.

You only need something like:
