Healthy Weeknight Meals?

I know this has already probably been discussed but can't see any newly started threads. Husband and I want to start eating healthier and in better moderation (I.E. we will eat taco kits built for a family of 3 - 4 like it's our job). I hate looking up recipes online (because I'm lazy and I find all the healthy stuff is either expensive or random items I'll never use again). After a long day at work where my brain wants to melt, I just want something quick and easy (we usually turn to wraps (lettuce and taco) as it's quick and easy and you can pack lots of veg in there (but the wraps are obviously not great calorie wise). We occasionally do stir fries (although not as much as we could/should) and pasta (but, again, I'm rubbish with moderation and will end up having more pasta than is probably good).

I'll hold my hands up. I am not a person that is great at pre-planning. I can never make my mind up in advance with what I want the next day, let alone a whole week....and I very much love food and the taste of good food so HATE having things that are just mega bland. I don't need it to be the healthiest thing in the world, but any suggestions or recipes you can all share for things that are relatively quick and painless to make on a weeknight when you're brain dead? Happy to make big batches if they serve for good leftovers and even better if they are ingredients I can buy that *don't* go off within 2 or so days or can be used to make other recipes. TRIPLE points if it actually has quality flavours :D (doesn't have to be the leanest healthiest meal ever, just healthIER).

Sorry, my brain is already dead due to being back full time for the first time in two weeks. Hope this makes sense :)

We've done two boxes now and have learned LOADS of new recipes for mains and sides.  Has really shaken things up.  You pick which recipes you get.

I’m not sure how easy it is to get zucchini or squash there, but here in the states I use a julienne peeler and make zucchini “pasta” and sauté it slightly in garlic/spices depending on the dish and use that as a substitute for pasta. I still have a small amount of pasta to satisfy that carb craving, but use the zucchini as my primary pasta holder. We use the zucchini noodles for spaghetti, basil pesto chicken, shrimp scampi etc. anything you would use pasta for.

It's easy enough to get zucchini and squash (for zucchini, just look for courgette :) ) That actually sounds smart to use zucchini as primary pasta but use actual pasta to satisfy the craving :) Thanks!

A favourite in my house... Buffalo Chicken Jalapeno Popper casserole.  It's super tasty and spicy, and low-carb:
Look at the photos before you judge... it is lush!  It doesn't meet your requirement for 'quick', but you could do a lot of the prep in advance, which might help...

We make little kebabs out of minced lamb.  Add some onions, bread crumbs and an egg and then form into little turds.  Make up some tatziki sauce by mixing greek youghurt, sour cream, chopped cuke and feta.  Grill the lamb, or put it in a pan with a little oil, then eat it wrapped up in Romain lettuce leaves.  That's the healthy bit.
