Second happy thing! I just had a realization...  Now that I have an oven, small though it may be, I like my utili-kitchen.  Don't get me wrong: I'm still eagerly anticipating the day I have a real kitchen again (one with my dishwasher actually installed and operational!).  But I just realized I'm perfectly happy baking in my current tiny kitchen space.  I've made so much bread in the last couple of weeks, and now I have "banana cake" (that's what my husband calls it, because it's not really a bread) going... Utili-kitchen is better than my old kitchen before we moved.  Yay!  (Future kitchen will be the best kitchen of all, though.  Obviously.)

You can make cheesecake now!

Oh my gosh... you may be right!  I'll need to look into what a proper NY cheesecake entails, as I've only consumed them, never made them.  My combo microwave/oven is surprisingly good at what it does, but cheesecake might be a delicate thing...

Ah!  I just need a springform pan and to buy some ingredients.

You can totally do it. It's not as difficult as you think.

Yes, legit real graham crackers available right here in the UK.  You just have to know where to look. Lol

Yah know, I have graham flour here. That one uses to make graham crackers. Now, granted, I've poured it into a glass canister (I never leave my fours in paper for storage) and so it's been "opened" and is sitting up in my cabinet. But I'm going to end up throwing it out, as things are progressing that we'll be leaving before I have a chance to use it.  I can certainly put it into a large zippy-lock bag and send it on to you if you want it to try to use to make crust or crackers.

It looks like I'm also going to have a lot of  spices and things like canned and dried Mexican peppers and stuff....  Not sure exactly when we are leaving, but I'm confident we're going to have groceries of that kind left over. Some opened, some not. Should anyone want them in a couple of months.

Nah, it's not delicate. My dad makes a kick*ss one. His recipe bakes it really high heat (450) for like 10 minutes than drops it right down for for 45. It's an enormous cheesecake though.

I know!

And that is something that has always bugged me on cooking competitions. One can not be judged on a cheesecake that has not set properly!

Which cream cheese did you use for yours? I may need to try a crustless cheesecake soon. My husband would approve of it!

Preface: I ordinarily buy whatever store brand "soft cheese" they have.  I never ate cream cheese in the US, so when I started eating it here, I had nothing to compare it to.

Having said that, to be safe, I bought the branded stuff for my cheesecake.  Philadelphia.
