I can’t say I ever really enjoyed sweet breakfasts because it makes me feel jittery for an hour after and then I’m starving.
I love biscuits and gravy for breakfast and a skillet that’s served at Denny’s. It has Mexican chorizo, potatoes, green peppers, onions, cheese with two eggs. Migas are also pretty tasty too. It’s essentially scrambled eggs, tomatoes, peppers, onions (I sense a theme) and crispy corn tortilla chips mixed in with shredded cheese.
But my absolute favorite breakfast are huevos rancheros with green chile salsa and a side of Mexican rice. My father’s partner of 28 years owns a Mexican restaurant in our hometown and her huevos rancheros were voted the best in the city for many years which is an accomplishment in a city with an 80% Hispanic population and most restaurants are Mexican. We never saw eye-to-eye but I always gave her credit for her exceptional cooking. She was kind enough to let me in on the preparation of this recipe which I dearly appreciated when I moved to England. I found masa harina there so I made this breakfast myself.
When I lived there years ago, very few places were open early enough to serve breakfast, apart from Little Chef and other really horrible service station cafes. 23 years ago, my best friend always dreamed of having an American breakfast only diner. I’m thinking he should re-visit that dream.
