I think chilli is one of those things that is actually just a big stew and there are million ways to make it. There is definitely 'proper chilli' with just meat and chillies and then there is any other incarnation of the stew all called 'chilli'.
I make several different types of 'chilli' and have put in all kinds of ingredients anything from pumpkin or butternut squash, sweetcorn, tomatillos or hominy if I happen to have them, courgettes, all different kinds of beans and lentils, chorizo, bacon, etc. Not proper at all, but always comes out yummy to me. I grew up in New England so very used to the 'chilli con carne' way and it never tasted different here to me. I have had it Cincinnati style with spaghetti and onions and cheese and that's really nice. But only had it with rice since moving here. But I like it. But 9/10 I eat it like a stew with a spoon.
