I had a productive day at work, I managed to get backdated official payslips (the ones with the tearaway bits on the side) and a copy of my P60 woo! I also asked about my December payslip, and I can request an official copy on the day I receive it (19th December) So that means I don't need to get my payslips authorized now? woohoo!
As long as they are all official ones, then no, they do not need to be authorised.
Question:
I received a copy of my contact via email, does this need to be signed? (the one emailed wasn't, but HR have a signed copy) and if yes, does this need to have a wet signature, or would a photocopy of the contract from my HR file be ok?
The contract is not a required document, but if you are sending it, it should have a signature on it.

Because we are applying as exempt to the financial requirement, does this make it less likely that the application will get accepted?
Nope - it just means you can meet the requirements under the old, easier rules instead of having to meet the new, more difficult rules.
Before July 2012, everyone had to meet the same 'adequate maintenance' requirement as you, and there was no minimum £18,600 requirement. However, the new rules introduced the £18,600 requirement, but they allowed people on certain benefits to be exempt from it and to still be allowed to use the old requirements.
Q:
Regarding the application... my Fiance has started the application online (not submitted), and one of the questions he mentioned was 'where is your sponsor now?' he put in the UK, but could this be changed to 'visiting in the USA', if he was to submit when I was still in the USA?
He should put where you are on the day that he submits the application... so if you will be in the USA with him on that date, then it needs to be changed.

The package that is sent... how is this bundled?...
currently, all my original documents are in a presentation folder, in separate wallets. Am I right in thinking that you just send them a big pile of paper?
also the barcode dividers I have seen mentioned... where can we access these from?
Just put everything in sensible piles and place in a padded envelope. Do not use folders, wallets or staples, as they need to be able to easily pick things out and scan them. If you are using the VFS round trip shipping labels, then you will need to go to a UPS store to get a UPS envelope to ship it in.
Alternatively, there now also seems to be an option to scan your documents at home and upload them to UKVI.

It seems copies are now accepted, though there is still some contradictory information about it. I would recommend still bringing your documents with you, since you are going over to the US anyway, just in case. You can always copy/scan them while you are in the US.
At the moment people seem to be either:
- sending originals and copies
- sending only copies (we have had an approval sending only copies)
- uploading their documents to UKVI
