Pumpkin (not really) Pie and Pecan Pie....

Okay, I've been lurking around the food section for a bit - and it got me in the mood for baking.

Tonight I made a pecan pie (I had/have 3 jars of Karo).

Well, I tried something different with the pumpkin pie (didn't make one for T-giving and was in the mood for one).  I couldn't find a pumpkin over the weekend SO, I made a sweet potato pie.

It just came out of the oven and looks/smells GORGEOUS!  The pecan pie was a bit disappointing.

Anyone ever have a pecan pie explode? Mine did...while it was baking it got a bubble and I pulled it out and patted the bubble softly and it caved in!!!  Anyone think that's due to an air bubble under the crust?  Too weird.

Anyway - if the Sweet Potato pie tastes as good as it looks/smells...I will post the recipe here.

Pecan pies do naturally bubble up like that in their last 10 minutes of cooking. It has something to do with the corn syrup. Then when you take them out of the oven, they naturally sink down to normal.

ok so was it any good???? i'm sitting here for the last couple of days waiting to find out how the pis tasted.... GOD i want some pumpkin pie and cool whip

Mmm. I'm SO in the mood for pie now!

Jacky, did you prick the crust before you baked it? Sometimes pricking the crust really well with a fork and flash baking it for like 10 minutes before you put the filling in can keep those stupid air bubbles from forming!

Here ya go: piece of cake...erm I mean pie!  ::)  You can use this same recipe with fresh pumpkin puree or a can of pumpkin if you have it.

Filling:

3 large eggs

2 cups fresh sweet potato puree (peeled - boiled sweet potatoes - then mashed - drain any excess water or liquid - do not mash with butter or margerine)

1/2 cup heavy whipping cream

1/2 cup light brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/8 teaspoon ground cloves

1/2 teaspoon salt

Bake the pie for about 45 to 55 minutes (at 190C) or until the filling is set and the crust has browned (the center will still look wet).  (A knife inserted about 1 inch from side of pan will come out almost clean.)

Speaking of pumpkin...
we want to make pumpkin muffins, but can't find any canned pumpkin.  Anybody see it in any local markets?  Tesco?

Try some local shops.  I found some Libby's tinned pumpkin in an Asian grocer shop near my work.  You may have some success in Sainsbury's or Waitrose if you have one nearby.

I know this is a bit late, but you may want to try Waitrose, as well. Our local Waitrose has been carrying tinned pumpkin since November.

Also a bit late, but...
on another thread, posting about my first hostessing Thanksgiving dinner - for FOURTEEN people - (yes, I'm insane); I opted for my favorite slogan:

I found tinned pumpkin.  I found Karo syrup.  I found pecans.

Oh sure, the Karo syrup was £4, but HEY... twas the night before Thanksgiving.

And Harrods was the first place who knew what I was talking about when I used the phrase 'cheesecloth'.
