My partner moved here on Oct 16th with her fiance visa. We got married a few days ago on Jan 24th and are looking into upgrading the visa/applying for the spouse visa, however we're struggling to find items to prove that we live together (as it requests) as we live with my parents, so don't have any council tax, mortgage, utility bills etc.
Does anyone have any recommendations for letters we could receive to prove this? At the moment the only one we have is that the local council is mailing us our marriage certificate.

Examples of acceptable items of correspondence
• letters or other documents from government departments or agencies, for example HM Revenue and Customs, Department for Work and Pensions, DVLA, TV Licensing
• letters or other documents from your GP, a hospital or other local health service about medical treatments, appointments, home visits or other medical matters
• bank statements/letters
• building society savings books/letters
• council tax bills or statements
• electricity and/or gas bills or statements
• water rates bills or statements
• mortgage statements/agreement
• tenancy agreement(s)
• telephone bills or statements
It is tricky when you are living with parents but bank statements are solid start. You should be getting yours sent monthly on paper and your partner should have changed their address with her US bank and credit card companies so that they are sent to the UK address.
Try registering with a GP and dentist, although they would still have to pay for treatment until after FLR is granted, it will hopefully generate some post.
Another idea is to write to HMRC with a tax related question, your partner could just ask if they need to complete a self assessment tax return for example. It can take a couple of months to get a reply though, so you've probably left it too late for that one.
You could try to open a savings account in both your names, at the bank you use. Savings accounts are usually easier to obtain.
If you don't manage to get your 6 joint equivalent pieces of mail, you will just need to write a letter explaining why you have not been able to provide them. It's fairly common in your situation so won't be a problem at this stage.
