What is the difference between a downloaded PDF document bank statement (which contains full address contact details, bank info etc) versus an original recieved in the mail which once scanned, saved as a PDF and then uploaded will appear visually exactly the same as the former?

While they may not look any different, it’s a UKVI requirement that any downloaded PDF statements MUST be stamped/signed by the bank on every page (or accompanied by a letter from the bank) to confirm their authenticity.

It may be that the PDF statements have something stated on them that shows they were downloaded... I’ve just checked my PDF bank statements and at the bottom of each page it says:
“Downloaded from Natwest Bank Online Statement Service on 22/09/2020”

Lastly (hopefully), with regards our passports, are copies needed of all pages or just the photo page/s?

and as long as we use a minimum of 3 different resources, the same resource can be used multiple times (i.e NHS letters, bank statements, credit card statements etc)?

Yes. You can have as many of each source as you like, as long as you have at least 3 sources total.

So, if all your documents are individually addressed, you could have:
1 NHS letter
1 credit card statement
10 bank statements

With regards copies uploading copies of the my wife's passport - she received a new US passport in June 2018. Do we need to upload all pages of the current one together with all pages of the previous passport too or will the current one suffice?

She will need to upload:
- every page of her current passport
and
- every page of every passport she has held since moving to the UK

If my wife arrived to the UK on 12th Dec 2015, are we correct in assuming we can submit our ILR application online this Saturday, 14th November?
