Hello,

I'm wondering, if I left my job and went for a research degree, and if it paid me £20k/year stipend, would that meet the £18.6k requirement for the visa sponsorship through the salary route? even though its a stipend and not a salary per say?

Yes, that’s fine, as long as the stipend meets the requirements :).

Though it wouldn’t be under the salary category at all. Instead, you would apply under Category C: Non-Employment Income

As stipends are tax-free, you only actually need to be receiving £15,800 per year from the stipend, not £18,600.
