Just going to rearrange your upload sections slightly, as the documents are not all in the correct sections:
Application Documents
Applicant passport
Part 1 consent statement (Do I need part 2 – there are no joint accounts?)... you need to include:
Sponsor's Declaration, plus Part 2 if you have any documents with both your names on them.... bear in mind that someone on the forum was asked to sign and submit Part 2 even though they did not have any joint accounts, so it might be worth just signing it anywayProof of Identity/Travel History- Applicant's BRP

We wondered whether the pension statement was an acceptable source? The alternative would be another credit card statement, which would make the sponsor have a letter from the same source 3 times in a row.
Yes, the pension statement is fine. It doesn't matter how many times you use each source, as long as you have at least 3 different sources in total. You have 4 different sources, so you're fine.
I was also wondering if we needed to include any photos, and when we get to the end of the application, if we need to include the consent statement part 2 as we have no joint accounts?
No photos should be included.
As I put in blue above, it may be worth signing Part 2 anyway, just in case... as someone was contacted and asked to supply it after they applied, even though they didn't have any joint accounts.
