Other brekkie ideas: warm Wheatabix w/mashed banana. Low fat Greek yoghurt w/cinammon, honey, raisins and chopped nuts. No bake peanut butter oatmeal 'cookies'.
Do you like humus? I have a recipe to make it w/roasted red pepper. Then stuff a pita w/humus, sliced tomato, and olives (I use canned). GREAT lunch! I also do a fierce white bean dip to stuff a pitta or spread on a tortilla.
Tea - don't leave out pasta alternatives like couscous and quinoa. Also the humble jacket potato, but with homemade chilli con carne and cheese, tuna nicoise, and cheese w/Worstershire sauce under the grill. For a quickie meal, we saute bacon pieces and then mix w/pasta tossed in a dressing of lemon juice, melted marg, chopped olives and garlic. You can add some fresh chopped tomato, too.
I do a LOT of stews and soups - thickened w/kidney, canellini, barlotti or black beans and red lentils. Lower fat that creme and adds some veg in.
