Me too! I just bought some polenta (also labelled cornmeal on the packet) today and plan to make cornbread tomorrow!  :)

Well after seeing this thread, I had a SERIOUS hankerin' to make some cornbread, especially as the 4th of July is coming up, and I want to bring as many home made American goodies as possible to the small party I'm going to (I'm also bringing a small camping burner and will be making smores for everyone, yum).

I went out and bought some polenta, and have tried a couple recipes. However, I'm just not getting it right. Does anyone have any recipes for cornbread they really love? I know some people like it a bit more sweet and cake like, but I prefer it a bit more savory. Here's the recipes I've tried (I try to make things as vegan as possible, which i KNOW, might not work for American baking guilty pleasures) -

I substituted the milk in that one for soy milk, but did use actual butter. They were good, and we ate ALL of it in one night, but still missing something.

So I tried again today, but this time added half a cup of corn (i like having actual corn in it). It tastes better, but STILL. I'm just missing something! I just don't know what!

Any suggestions? Do I need to just suck it up and use all dairy?

You could try replacing something with a tin of creamed corn. You can get that at Tesco. That might help with the texture, keep it moist and flavourful if you are trying it vegan. You could check out 101 Cookbooks for a vegan recipe, she does a lot of vegan/vegetarian baking, or look at the Homesick Texan (just google either one of those blogs and the links should come up) and try to modify it. I know the Homesick Texan has a savory recipe, so that might work for you, and then maybe try adding the cream style corn in place of milk or something.  Not sure on that one! But it seems it will take some experimenting to find a vegan recipe you like. Good luck!

Anyone know of a cornbread recipe for breadmakers? I can't seem to find one. And I am too lazy not to use my beloved breadmaker.

I don't think that cornbread would really work in a breadmaker. 

Most cornbread is a quickbread and doesn't rely on yeast to rise and that is where the breadmaker really comes in handy.

Every cornbread recipe I have ever made takes about 30 minutes in the oven to cook.

It is really more of a "cake" than a bread.  :)

I don't have a breadmaker, so can't say that I've tried it.  I've googled and found these:

http://allrecipes.com//Recipe/crusty-cornbread/Detail.aspx (has 1 1/2tsp Yeast)

The 2tsp Yeast recipe seems to be the general consensus for breadmaker / bread machine Cornbread.  Even Hillbilly Housewife lists it.   ;)

This one doesn't have yeast, but it requires box mix and cooks it on the cake setting:
