I've emailed my mother, though honestly I think she uses a boxed mix.  Her solution for me when I was trying to cut down on fat and calories, HALF a matzo ball ;D :P

hehe....as if I'd ever be able to stop at half. ;D Thanks for emailing her...fingers crossed that she has a recipe or knows of one. :)

Just do a google search. There's lots of recipes for it there!

Yeah I did the google search...was just hoping someone had a recipe they'd actually tried and knew was good. I hate finding a recipe online and making it just to find out it's icky. :P

OK, this is what they said. 

~egg substitue instead of eggs which cuts some of the fat

~one egg white in lieu of egg; cut down the oil by half and add broth

Sorry there were no other suggestions, but I think this is a good start!

Thanks stacey. :) I'll experiment with those ideas mixed with stuff I found through google and see what I can do. Wish me luck. :P Or maybe I could try your mom's idea and eat only half of one....if I make them the size of softballs that is. ;) hehe

I think if you sub egg white for an egg you have to use 2 whites. Not sure how many cals you save there but I doubt it's enough to justify the loss of flavor.
