Gingerbread

I had the most amazing gingerbread while in Glasgow - actually, when we were on a road trip up in the highlands. I believe I had it in the cafe at one of the visitors centers up there.  I wonder if anyone might have a UK recipe that they themselves (or a family member) has actually used?  The one I ate had, I believe, some sort of raisins or other fruit in it and tasted strongly of ginger and cinnamon. It was fantastic and I've had nothing like it since then. Would love to, though!

Thanks!  That sounds really good.  Now I only have to figure out where to find stem ginger in syrup and golden syrup.

Hope you folks are ok over there - the news is showing you as having really nasty winter weather!  :o
