i was almost suprised at how easy, healthy and simple it is!!!!!!!!!!!!!   ;D

I think i jacked most of it from a WW recipie and made a few alterations.....   ;)

I did this last night - though I didn't have a pepper so I used some courgettes and I didn't have the individual herbs so I used Italian Seasoning - and it was FAB. DH loved it too!

Sounds lovely, Anne.

It's the balsamic vinegar and olive oil that make it.  And you can so easily substitute your favourite veg or veg you have on hand.  I added mushrooms last time I made it.

Oooh, I bet mushrooms WOULD be good!!! I think as long as you use veg. that have similar cooking times you could do loads of fab. combinations!
