Hi,

Does anyone have a good recipe for Hush Puppies?
Got a craving for em!!  :)

They are like fried fritters made with cornmeal.

Sorta like corn bread with bits of onion that are about 1 tablesppon in size, but deep fried rather then baked.
(Sooo not good for you, but ever so yummy!!)

1 cup flour
2 teaspoons baking powder
1 teaspoon salt
1 cup cornmeal, preferably stone-ground (course ground I assume)
1/2 cup minced scallions or finely chopped small onion
1 egg, beaten
1 cup buttermilk
oil for deep frying

sift flour, baking powder, and salt into a medium size bowl, stir in cornmeal and scallions.

In a separate bowl, beat the egg and buttermilk together. Stir rapidly into the dry Inged. Let the batter rest 20.30 minutes.

Heat oil in heavypan to 375 degrees. Drop into hot oil by tablespoons. If the batter seems to heavy add a bit more buttermilk.


If you can't find buttermilk, 1 cup milk with a dash of vinegar in it will curdle it, stir it well after letting it sit a minute


This recipe my momma has been using for AGES....always taste yummy...sometimes she puts corn into it as well or cheese or even jalapenos...and a tiny bit of garlic powder or garlic salt.
