Reduced Fat Oatmeal Raisin Cookies

Preheat the oven to 190C.  Spray cookie sheet(s) with non-stick spray.

Mix together:

1 1/4 c AP flour
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt

In a separate bowl, blend together:

1/4 c corn, sunflower, or canola oil
2 tbsp unsalted butter (softened)
1 c packed dark brown sugar
1 egg
1 egg white
1/3 c light corn syrup (I have a stash of Karo syrup)
1 tbsp milk
2 1/2  tsp vanilla

Add to the oil mixture:

2 c rolled oats
1 c raisins

Let the oat mixture rest for 10 minutes, then stir in the flour mixture.  Drop the dough by rounded tablespoonfuls onto the sheets about 2 inches apart.  Bake 7-10 minutes until lightly browned all over.

I forgot about the Karo syrup ingredient until now, so here's another recipe (not low fat though!):

Classic Oatmeal Cookies

Preheat oven to 175C.  Grease cookie sheet(s).

Mix together:

1 3/4 c AP flour
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg

In a separate bowl, blend:

1/2 pound (2 sticks) unsalted butter (softened)
1 1/2 c packed brown sugar
1/4 c sugar
2 eggs
2 1/2 tsp vanilla

Stir the flour mixture into the butter mixture.  Add in:

1 cup raisins
3 1/2 c rolled oats

Drop by rounded teaspoonfulls about 3 inches apart.  With a wet hand, lightly flatten the cookies.  Bake 6-9 minutes or until lightly browned all over.

I don't know if they still do it - Ben & Jerry's is pretty sporadically kept at my local shop, but they did an oatmeal cookie flavored ice cream not too long ago. I forget what it was called - I thought it was kind of an odd flavor for ice cream but it was really, really good. You might keep an eye out - I'll see if I can dig up the name (and if it's still available).
