Corn bread ..semolina, polenta oh dear

I know this has been brought up before, but I am lazy and don't feel like finding the thread.  What in the UK can you use or have you used to make cornbread?  Has anyone tried to use polenta or semolina?

If I dont have cornmeal I use polenta...same stuff just find it a bit more finer ground....it still comes out tasting like cornbread!!!!

just use it the same!

obviously your momma's recipie uses cornmeal.  you've used polenta before- not the ready made but the powdered kind.  ever tried a combo of semolina and cornmeal?

i remembered pumpkin canned, karo, peanut butter cups... i forgot the jiffy cornbread boxes... next time.

Hey meggles someone put a recipe on here for a sweeter corn bread.... similar to Jiffy or Betty Crocker...

No I haven't I just.. used the dried polenta from the health food store...and used it like for like....is semolina courser?

would it make it have a more cornmeal feel?


oh no will post the recipe for on here...I have loads and loads of recipes..if there is anything anyone wants just ask...I went and sat with her one time and asked how to make things and she told me and I wrote for hours....

Homemade gingersnaps....sugar cookies....I also have a christmas recipe book that has all the american favorites in it...

i've used polenta when i couldn't find cornmeal,,but now I can get course cornmeal from the healthfood shops.

Sorry guys this is so late...being a holiday and all about family...I called my sister I haven't talked to in 7 yrs, and talked to her for 81 mins...and reconsiled our differences...very emotional night...

any ways here is my recipe for corn bread and can be used as muffins as well


4 Tablespoons melted butter or bacon drippin
1/2 cup flour
1 1/2 cups of yellow corn meal
2 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 egg
3/4 cup milk

mix all together and pour into desired pan(s)

not sure what temp to cook at 175 maybe

if you fix this for the first time and it isn't sweet enuf add more sugar next time.

Our Sainsburys sells a "Merchant Gourmet" brand "1 Minute Cook" Polenta, which is -- if you the read the ingredients/contents label:  Ground Maize (aka cornmeal). :P  It's a smallish bag - maybe one pound...can't remember what it cost - but I know at the time I thought it was ridiculous knowing how much a 5-lb bag of cornmeal costs in the States.  All that time when I was small thinking that cornbread was po' folks food & now to learn that it's actually 'gourmet polenta'!  LOL

Oh well...in our store, they sell it in some kind of specialty foods aisle -- like with the health food stuff.

I am with you, MeShell, I Looove to cook too. I could be happy having dinner parties 5 nights a week, as long, of course, as I have someone to clean up for me!
