Beans: SOAK, SOAK,SOAK...then pour out the water before cooking. Not only does this moisten the beans and reduce liquid absorption while cooking, but by dumping the excess water and starting with fresh, you reduce the...emabarrassing by-products which results from eating the beans.  :-[
