Dried Beans....

So i had a bag of dried beans (black, chickpeas, aduku, lima, kidney) and it said to soak overnight.  i put enough water in to cover and left them

ok i must be daft but i had no idea they were going to drink it all up!

So now i'm a bit nervous for my chilli, they seemed pretty dry still.  Almost half absorbed due to there not being enough water.

I threw them in the slow cooker with a can of tomatoes in juice, a big container of v8 and some tomato paste (as well as carrots, onion and peppers and some chilli powder and other spices). I hope i put enough liquid in there.

Do you think those half hydrated beans are gonna suck up all my stock??!!! I'm worried i've wasted some good yummy organic beans!

Um not sure how they will turn out but one method for beans is to quick soak them.  Put them in the mocrowave or in a pot on the stove.  Bring to a rapid boil, remove from heat and let stand for 1 hour.

Drain the liquid and use as normal.  I just chuck mine in the microwave and leave them there once they have come to a boil.

Not sure how they will come out tonight, but if you have left plenty of stock they might be okay.

i might make dave go home at lunch to check on it!

it's not that they were hard, they weren't.  they were all puffed up to their normal size but...well.....drier than i'd wanted!

i am an idiot i had no idea they would absorb!  ::)

Another bean cooking tip is to not add tomatoes/tomato juice till after the beans have cooked a while. The acid in the tomatoes can cause the beans to be a bit tough. Good luck! :)

Don't feel bad, I tried to make gravy the other day and it tasted like flour.  Trial and error kind of stuff... I'll never do that again :)  ;D

and never put salt in it until the very end, when the beans are already cooked!

I usually do the quick soak like what vnicepeeps described.  Then I drain & rinse, cover them with more water (or maybe stock) and cook them until soft or almost soft before I do anything with them in a recipe.  (But I don't have/use a slow cooker.)  One of my cookbooks says this method helps to reduce the...'erm...thundery effects of beans too.

omg i'm stuck here at work so my poor beans are probabally going to be overcooked too by the time i get home!!!!!  :o

i should resign myself to grilled cheese now!

Did you just soak them or did you boil them after soaking?

The verdict:

It was NASTY.

Some of the beans were done to perfection, while the kidney beans and bigger beans were dry and brittle.  it had been on so long the top burned (had to stay later at work)

yesterday was the worst food day for me 2 disasters at lunch time in the cafe upstairs, and then dinner.  i was about to cry.

i threw together some pasta and we ate that.

what a day

That's a shame!  I was hoping it would work out...but that working late thing always gets ya!  Bummer.
