philly cheese steak

Someone mentioned Philly cheesesteak recently, and I was wondering, what exactly is it, or what's in it? I got some shaved beef yesterday at Trader Joe's and the package said "Great for Philly cheesesteaks." So now I'm on a quest. Any recipes?

As a Philly girl, I couldn't pass this one up!

A cheesesteak is just heaven, and is best described by sharing the recipe:

1. You'll need shaved beef that is very thin so it cooks quickly and remains tender
2. Use a fresh high quality Italian roll (or small crusty loafs from a local bakery)
3. Decide if you want your steak with or without fried onions
4. Pick a cheese. Most common is American cheese, but I've never found any in the UK (Kraft singles are awful). Provolone or a mild cheddar will do. The Philly favorite is "cheez whiz"
5. Start to cook. Sauté the onions (and peppers and mushrooms if you like)
6. Fry your steak until brown but not crispy or burned. You can mix in the fried vegetables now or add them at the end
7. Place the cheese on the meat until slightly melted
8. Place the roll over the meat/cheese/vegetables and scoop it into the sandwich
9. You can garnish your sandwich with pizza sauce, hot or sweet peppers or pickles as you choose
10. Enjoy your Philadelphia cheesesteak! 

If you ever go to Philadelphia you will need to try an original - there are three favorite cheesesteak joints: Pat's, Geno's and Jim's. It's a regular debate as to whose is best!

Just a quick followup, Emily.
I made them and they were delish. How have I gone so long without ever tasting one of those? I can see, though, haw the thin-sliced American cheese would probably work better than the Colby I used. Still, yum. The mushrooms made it.

I made a Philly cheesesteak for my DF when I first moved here, and now whenever I consult him on what to make for dinner, he always requests cheesesteaks.  I use thinly sliced mild cheddar in mine, and they turn out fab.

There are many different types of hoagies (turkey, tuna, etc.) but the TRUE original hoagie is 'the Italian'. It is just an elaborate sandwich, but delish and fun regardless.

Enjoy!

* 4 hoagie or sub rolls, split
Bread is important, but it is difficult to find a good 'hoagie' roll in the UK. Finger rolls are too soft, so if you are UK-based I would go for more of a crusty roll or Marks and Spencers carry nice sub-sized crusty rolls
* dried oregano (sprinkle on bread)
* olive oil (sprinkle on bread)
* prosciutto ham, thinly sliced
* capacola (if you can find it, otherwise you can use bologna), thinly sliced
* genoa or soprassata salami, thinly sliced
* provolone cheese, thinly sliced
* 1 large tomato, thinly sliced
* 1 small onion, thinly sliced
* sweet peppers (optional)
* hot peppers (optional)
* dill pickles (optional)

Pile it all on and pig out - serve with crisp/potato chips!
