We, too, had cake for Xmas.  Slightly unusual, but lovely nonetheless.

Because we don't like Xmas pudding, I needed to find something to fill its place.  I had a package of Betty Cocker chocolate fudge cake mix and whilst thumbing through a cookbook, I saw a recipe for a cherry (pie filling) and fresh whipped cream topping.  Combined together, it made for a really scrummy treat.

No babies in the cake tho' ...  :o

It is a bit like I black forest cake, I suppose, but instead of frosting a whole cake with it, you add the topping as needed.  Here's the recipe for the topping:

Chill 1 can (1 pound 5 oz) of cherry pie filling.  In a chilled bowl, beat 3/4 cup of whipping cream, 1/2 teaspoon of almond extract, and 3 tablespoons of powdered sugar until stiff.  Gently fold pie filling into whipped cream.  Serve as required on slices of cake.

I baked a Betty Crocker chocolate fudge cake (two round tins).  Took a couple of teaspoons of cherry pie filling and gave it a quick purée.  Then smoothed a thin layer between the two cakes.

Instead of mixing the whipped cream and cherry pie filling together, I opted add them to the cake separately.

Very yummy and slightly different from the ole' cake and frosting routine.

Bump!

Since Mindy was talking about making sugar cookies, I thought I'd bump this topic.  I'm going to be baking either tomorrow or the day after, and I'll be using this trick for my sugar cookies!

I saw loads of coloured sugars on the ferry to France in October (Brittany Ferries) about £2.50 for a large cube shaped box, in pastel pink, yellow and green, so if you have any friends that hop across to Brittany...... :)

I am sure recently I saw a gourmet selection that sold rose pink, rose flavoured sugar, but can't remember where I saw it, if I do, I will put it on here  ???

That's okay, Sheril.  I resurrected it in case there were others that couldn't find coloured sugar in the stores when making the cookies this year.   ;)

Oh, I did see some coloured sugar this year.  Barbie brand at that.  It only came in pink though and because it was branded, it was not cheap.

I'm no cookie queen.  I'm lucky if they turn out properly!  Would you like to see my effort in candy cane cookies last year?  They looked like Playdough and rather tasted like it too!  :o
