Meatloaf

Thanks to the What's for Tea at Your House? thread I have a hankering for Meatlof.  I've never made it, and can't even remember what to have it with.   :)  But if anyone has a good recipe would they mind sharing?

it is a very plain one, good with ketchup!

oh, there's no way my kids would eat salsa and turkey mince.  :P

Meatloaf and potato salad or 2 things that are never the same. They differ from person to person.

I, for instance, use about 1 pound of hamburger (minced beef - the 2 of us in our house)
first I beat up one egg
mix in some ketchup and bbq sauce with salt, pepper, and/or seasoning salt., and any other seasonings you so desire.
Mix it all together with the hamburger.
Now you can either add, oats, crumbled up saltines, or bread dipped in water and torn apart. (my mom used to use all three) and mush it all together.  You can add things like onions or really whatever you want.  cook for 45 minutes or so on 195 celcius or until done.

we have it about once a month in our house.  Not something my dh was really used to until we married. hmmmm... maybe I will make some tonight as well!  lol

See!  It's like hypnotic.  Read the word meatloaf and want it!  That's what happened to me.

I cook mine by first sauteing a bell pepper and onion (both minced) in some olive oil. Mix in ground beef, 1/2 c bread crumbs, 1/2 c ketchup, 1/3 c milk, pepper and salt to taste. We don't use egg because daughter is allergic. Bake at 350 for 45 min to hour and there ya go!

I also put a couple of strips of bacon on top, gives it extra flavor.

1 pound ground beef
1-2 eggs
Saltines (or corn flakes, rolled oats or other crumbly crackers)
Ketchap or tomato soup
Worchester sauce
S&P

Place the meat in a large bowl and mush with hands.  Add eggs, mush with hands some more.  Add about 1/4 - 1/2 packet of Saltines, mush some more.  Add ketchap or can of tomato soup (you guessed it, more mushing!) then add W sauce and S&P.  Mush with hands until it is all good and mixed.  Shape into a loaf and place in loaf pan (for flavor, lay un-cooked bacon over the top).  

There are loads of variations: BBQ sauce instead of ketchap, cream of mushroom soup, add dry Liptopn onion, add fresh onion, garlic, or other vegetables ...

Place in the oven at 350 for about an hour (use a thermometer to check done-ness).
