Tried and True Mole Recipe, anyone?

Right. I've tried a couple and I've tried jars. None are quite right.... There's this restaurant near my mom's house that makes THE best chicken mole enchiladas ever, and I've even written to them to try to get it off of them. No luck.

So anyone have a recipe that they can recommend? I'm starting to need proper Mexican food and we won't be going for a visit until November!  :P

I didn't try epicurious only because there was a recipe in Gourmet recently that just didn't cut it, so I sort of assumed I'd strike out on epicurious....

Wow. Good work! That one looks super authentic which is exactly what I'm after. But... lard? I'm not really sure if I can deal with lard!  :P

I don't know which brands you've bought in a jar but I've always found Dona Maria to be the best. I do tweak it a little of course but I do that with everything. :P

Coolchile.co.uk (or something like that) sells mole in a packet and in powdered form. It's nice.

Hmmm. Good question. I would think that maybe you could make vegie enchiladas - mushrooms, courgettes, that sort of thing. Might be super good! Or even cheese? Hmmmm. The place in California that I just loooove sprinkles it with feta and it's such a nice touch....

OK, looks like I might have to try the powered stuff. Melissa, where have you found Donna Maria (and how do you like to tweak it)? We brought home a jar of what I think was that on our last trip but it popped open and spilled (thankfully I wrap EVERYTHING in plastic baggies!!!)  ::)

I'm still here in Texas so the Dona Maria stuff is in all the supermarkets. Maybe they have it somewhere online? I'll check and see what I can find. When I tweak it I add some saltine cracker crumbs and some Abuelita chocolate...it's sweet and has cinnamon in it. I just keep adding stuff until it tastes right to me. :P No exact measurements. The Abuelita chocolate I use is actually chocolate tablets for making hot cocoa. Weird I know..lol. But it works.

Thank god you had everything wrapped in plastic when it spilled because that stuff stains big time! :P

haven't tried this recipe yet, but www.allrecipes.com just emailed me my daily recipe on friday...and it just so happened to be mole.  it looks like a simple recipe that can definitely be tweaked to your tasting....

2 teaspoons vegetable oil
1/4 cup finely chopped onion
1 tablespoon unsweetened cocoa powder
1 teaspoon ground cumin
1 teaspoon dried cilantro
1/8 tablespoon dried minced garlic
1 (10.75 ounce) can condensed tomato soup
1 (4 ounce) can diced green chile peppers

use US measurements

edited to add:  maybe i might go for real green chiles instead of the canned ones....i haven't even seen the canned ones in the UK...but i haven't looked that hard either.

One thing about allrecipes.com... it really helps to look at the comments if you want to tweak a recipe. :)

*edit - Oh and I've seen "canned" chiles... actually in a jar.. Old El Paso and some other brand as well.  I do prefer fresh ones though, just sauted first a bit with the onion.

And about that condensed tomato soup - noticed they don't have a lot of condensed Campbell's soup here in the UK and I've seen "cream of tomato" if I do see it.  So I was thinking you could just do some tomato puree (tomato paste) with a bit of water/chicken or veg stock to dilute.

I made some chicken enchiladas the other day that turned out really well with an Old El Paso Enchilada sauce packet.  I don't think it had unsweetened cocoa in it and probably not dried cilantro??  I added sauted onions, chiles and then threw in some fresh garlic last minute to brown then added tomato paste and water.  They tasted just like my favorite Mexican restaurant back home... or close enough! :)
