I've used this recipe by St Delia for years!
10 fl oz milk
2 fl oz water
1 tsp caster sugar
1tbsp dried yeast
8oz strong flour
1 tsp salt
butter, for greasing

You will also need a thick-based frying pan and some egg rings.
Heat the milk and water together ina small saucepan until hand hot. Then pour into a jug, add the sugar and dried yeast and leave in a warm place for about 15 minutes till there is a good frothy head on it.
Sift flour and salt into a bowl, make a well, and when the milk/yeast mixture is ready, pur it all in. Use a wooden spoon to work the flour into the milk gradually - when combined beat gently to make a smooth batter. Cover the bowl with tea towel and leave for 45vminutes.
To cook the crumpets: grease the frying pan and the inside of the egg rings. Place the pan on a medium heat and arrange the rings in the pan and when the pan is hot add 1 tbsp of crumpet batter to each ring. Let cook for 4-5 minutes - you will see small bubbles first and then larger ones that will burst to make the crumpet holes. Now take a spoon and fork and turn the crumpets and cook the second side for one minutes.
