I just had a mince pie with my tea . . . mmmmmm. 

When we were kids, our mum made 8 pies for Thanksgiving.  We could start eating pie in the morning when we woke up (for breakfast), and then the pies lasted for days and days.  We had pumpkin, squash, mince, apple, chocolate cream, coconut cream, blueberry, and cherry.  And lots of whipped cream to go on them!

I leave for work at 7:10 each morning, and get home at 6:00 each evening.  Wish I could stay home all day and do nothing but sit around on UKY!  What a life!  And I have no Internet access in my classroom, so I can't just stop teaching and surf UKY.  Can you believe it??  Horrid, my job!

PIE!!! I love pumpkin pie and Reeses pie mmmmmmm!!! I also like many others love chicken pot pie!!!

There is not much that I miss about the states, but I truly miss my Aunt's pecan pie.  She used to make one at Thanksgiving just for me. 
I would make my own-but for the life of me I can't make a decent pie crust.  I consider myself a decent baker.  I bake our bread, can make cakes, biscuits, etc...but my pie crust always disappoints.
Any hints?

I, too, considered myself a good baker, but my pie crusts were always the worst.  Then I started making an oil crust -- it's rolled between two sheets of waxed paper instead of on a floured board.  Very easy, always delicious, never cracked and too dry, etc.

I'll see if my daughter can look up my old recipe and I'll post it here.  (Just in time for Thanksgiving!)

Thanks Kathleen... i think Wiki are reaching a bit on that one, though!  ;)

Not sure if i have a favourite pie.
You could put just about anything in pastry, and i'd eat it with pleasure!  ;D

Anyone remember Marie Callender's Boston Cream Pie?
Corrrrrrrrrrrr... i havent had one for 12 years, but the last one i had, i ate the whole thing myself!  ;D

The trick to pastry, IMO, is to handle it as little as possible.  Once you add the water, mix it with a fork until it's barely incorporated and then squeeze it together in a ball.  squish it down flat and wrap in cling film, refrigerate for 30 min or so.

Roll out, turning a quarter turn each roll, using as little flour as possible.  The flour will make it tough if you use too much. 

I've tried rolling between cling film but I can't seem to guage the thickness when I do and my crusts always end up being too thick.  But if you can get the thickness right, it's a great way to roll dough.

It was soooo goooood cos it was almost like getting 2 for 1!  you'd get this lovely pastry full of custardy puddingy goodness, then a yellow cake on top with chocolate icing!   (at least this is the way i remember it... )
