Should be in Sainsbury's, with the cake making ingrediants, not with the rest of the chocolate.

Hi Catherine,
Did you look at Waitrose? I don't think our Sainsbury's is a good as everyone elses! I can never find anything there that other people say they've been finding at their Sainsbury's for years. I tend to have better luck with hard to find items at Waitrose.

It's usually called plain chocolate here, if that helps.  Watch out for the store brands though, because they frequently have super low cocoa contents.

The plain chocolate I have bought here is semi-sweet, not unsweetened.

It may be called 'cooking chocolate'.

Yes, I've found plain chocolate to be semi-sweet. I just looked in Waitrose but couldn't find any that didn't have sugar in the list of ingredients. The plain chocolate I've seen does say "for baking" but it is different from unsweetened. Has anyone found a way to adapt a recipe that calls for unsweetened chocolate? Would it make a huge difference, do you think, if I used plain chocolate instead?

I also haven't found unsweetened so I just buy the chocolate with the highest cocao solids (I think G&B does an 80% one) and then reduce the sugar in the recipe slightly. I made brownies that way and they turned out fine.

You can't get unsweetened chocolate here(to my knowledge) but there is a substitution.

1 T veg. oil + 3 T cocoa = one block of unsweetened chocolate.

Lindt does a chocolate bar that is 99%.  It was absolutely horrible to eat but perfect for baking. I used it to melt down when I was making a frosting for cakes and it worked perfectly!

Okay, that's good to know. I'll give up my search for unsweetened and just look out for an 80+ cocoa content...or use your substitute, Mindy.  Sounds like there are ways to get around this. Thanks, all!
