I'm hoping to make a big pot of jambalaya and I'm on the lookout for a passable substitute: something smoky that holds its shape. Any sausage suggestions?

maybe a Polish Keilbasa(sp) You can get a good one from Costco and I use it in my Gumbo

Thanks, Barb. Good suggestion. We don't have a Costco nearby, but I'll look in all the supermarkets.

Catherine, there's a new polish deli next to the cinema. I haven't been in to see what they have, but it's worth a look. If you're walking to Sainsbury's it's on the way!

Thanks, Kim. I did notice some Polish sausage at Waitrose too. But here's what I ended up doing: I was at the Thursday market in Bradford on Avon, and the French vendors had these  smoky little sausages that looked perfect, so I snatched some up. They smell fabulous, so we'll see how they work. Thanks for the tip! It's worth checking that Polish shop out.
