Jerusalem Artichoke (sunchoke)

We ordered a regular artichoke from our vegetable delivery service and instead got some sunchoke. I've never even heard of them before now so I'm hoping someone will have an idea on how to cook it.

Does anyone have any good recipes with sunchokes?

Ashley, Steve has just kind of fried them up before - like fried potatoes.  He peeled them & sliced them - might have parboiled slightly first, then fried them like sliced potatoes.  We've had them as a side to meat, fish, etc before.

Thanks for those, guys. I think we're going to roast them with our parsnips. From what I can read online they're a lot like potatoes.

amazing soup... peel then and cook them through with some onions & chicken/veggie stock, salk & pepper.  puree.  add a dollop of cream/milk and wizz again.  so lovely. 
If you harbour bitterness, happiness will dock elsewhere.

Umm, I have peeled and boiled them, with a little lemon juice in the water...then had them with butter and lemon...because, for me, they taste similar to the heart of the regular (Globe) artichoke!  Yummmm...

I love them in soup too. I have a recipe that calls for a hefty dose of rosemary and they go so well together!

We used one in a leek and potato soup and immediately noticed the difference. It tasted a bit earthy but smokey. Was nice.
