Chocolate brownie recipe?

Does anyone have a good brownie recipe they would like to share? I want something easy to make that goes all fudgy and squidgy in the middle.

1/4 pound butter or margarine
1 tablespoon additional margarine to grease pan
4 squares of bitter sweet chocolate
4 eggs at room temperature
2 cups sugar
1 cup flour
1 tea spoon vanilla extract
1/2 cup chocolate chips (optional)
1/2 cup walnuts (optional)

Preheat oven to 350 degrees (I don't know how that differs in England)
Take the one tablespoon margarine and grease a pan 9 inches by 13
inches melt 1/ 4 cup margarine and 4 squares of chocolate till liquid
With an electric mixer beat 4 eggs till light yellow and slowly add the
2 cups of sugar and the vanilla. Add margarine and chocolate into eggs and sugar mixture and mix together with a wooden spoon.  Add the flour slowly and continue mixing.  When flour is mixed in thoroughly, add the optional ingredients.

Bake at 350 for 30 minutes.

This is my mother's recipe, she is famous for it ;D

Stacey - I assume by "squares" of chocolate, you mean the one ounce squares you can buy in US supermarkets?  I just want to make sure I have the conversion right if I subsitute stuff from UK.

Self-raising will make it cakier.

The only problem I have with the recipe is making sure the top doesn't burn before the inside is done. The solution is to put some foil over them about 15 minutes before they are finished.

Yes, I meant to say that these were the Bakers brand chocolate. (Sorry) from the US.  I'm not sure what you can use instead.  T

My mom is famous for her brownies and cheesecake.  They are both amazing.  I would not eat anything else she makes though  :P :-\\\\

So it would be 4 oz of chocolate then? I guess any decent dark chocolate should work.

I use about 6 oz of chocolate and I use any dark chocolate from the store or chocolate chips.

and it's so easy, my kids make it regularly!  I don't put nuts in mine though.

Thanks for the offer Stacey...Baker's Chocolate Squares are always on my list of things to pick up in the US.  I just used my last 4 squares this weekend, but luckily I am going home in June and will pick some up.

Britwife - Yes, for Stacey's recipe - 4 oz of any decent dark chocolate will do.  I have used the Waitrose Brand before and it worked fine.  I think it was about 80% cocoa,

I made this one recently, and it was just perfectly delicious! They were ooey gooey inside, with a kinda crispy crust on top. If you've ever had tunnel of fudge cake, these totally reminded me of that, the fudgy part in the middle I mean. They were very fudgy and yummy.

My absolute fave brownie recipe is the one in the Silver Palate cookbook. So good! But the key to getting that lovely crispy top bit with the squidgy fudgy insides is to lower the heat for a while at the end of the baking.

Nigel Slater's brownie recipe is really good too, Britwife.  That's the one both DH and I have made before.

I'm going to try Stacey's recipe tomorrow. I got some 85% chocolate so hope that works. I'll let you know how they turn out!
