Care Package from Mom in New Mexico

My Mother, (bless her heart) has sent me a huge case of Costco-sized cans of Hatch chili from New Mexico.  Hatch chilis are mainly grown only in New Mex, as far as I'm aware.  There is no way I'd find them here in the UK.  So, now with the year supply of chili we now have to get through, I'm thinking what to make for dinner tonight.  Chili rellenos maybe...or perhaps chicken enchiladas with green sauce!  Ideas are welcome!

I don't have ideas for chili, but how cool of your Mom!  My Dad sends me care packages from back home and it always warms my heart!

God, that must have cost her a fortune as well.  Mmm, Hatch chilies.  I love the Chimayo medium red chili powder as well.  Don't you miss that autumn smell of chilies being roasted in the Smith's parking lot?

I have an idea: send them to me! Actually, I should be getting some of my own in a week--can't wait! I'm suffering severe chile deprivation...

Ditto on costing a fortune. You have a nice mother. Mine griped enough about shipping green chile to me when I lived on the east coast. I don't think she'd do it at all now that I'm here!
