Nigella Domestic Goddess Q
« on: June 30, 2007, 10:24:59 AM »
I have the US copy of How to Be a Domestic Goddess and I think her recipe for Soot's Flapjacks is way off.  Is there anyone here with the UK version and who would be kind enough to let me know what the ingredient quantities are?

The US one calls for (italics are what I used):

2 cups rolled oats (porridge oats)
1/3 cup brown sugar
1 1/3 cup butter (I used 10.5 oz, think that conversion is right)
1/4 cup light corn syrup (golden syrup)
(and some optional quantity of sesame seeds, which I did not use)

I ended up with a big puddle of butter and not nearly enough oats.  I had to throw in nearly another 2 cups of medium oatmeal and a couple more tablespoons of brown sugar.   I'm sure there must be a typo somewhere in the recipe.

ETA: 2 cups of rolled oats is about 6oz/170g.

I did a quick search and found a discussion about these flapjacks on www.nigella.com. Seems you're not the only one who thinks there's a problem!

The recipe I use isn't Nigella's, but just for the measurements:

250g (9oz) butter to 450g oats (16oz) plus all the other bits.

See, that makes so much more sense!  I'd guess that I probably used 300-350g, since the medium oatmeal is quite a bit more dense than the rolled oats - the texture seemed nearly right when I put it in the pan to bake, although still quite buttery.

Chary - from those posts, it looks there's more than one typo.  The UK version originally didn't have enough golden syrup (yet still seemed to come out too sticky).  The US version is a big butter puddle.  Weird.

I have the British version on Domestic Goddess.  Recipe is as follows:
450g rolled oats
75g soft brown sugar
300g unsalted butter
150g golden syrup
sesame seeds, optional

Hope this helps,
Kathryn

Thanks Kathryn, those ratios look a lot better.
