I keep seeing people mention deviled eggs on their menus, so I thought I'd share my favorite recipe for those. Not sure where I picked it up (it's not my original creation), but I sure do find it yummy!
Bacon Cheddar Deviled Eggs
12 eggs
1/2 c mayonnaise
4 slices bacon
2 T finely shredded cheddar cheese
1 T mustard
sour cream to taste
green onion, chopped, for garnish
Boil and peel eggs.
Cook bacon until evenly brown. Crumble and set aside.
Cut eggs in half length-wise. Remove yolks to a small bowl. Mash egg yolks with mayo, bacon, and cheese.
Stir in mustard. Add sour cream as needed to smooth mixture. Put mixture in a plastic bag, cut off corner, and pipe into egg white halves. Refrigerate until serving.

Also, a note about hard-boiling eggs in general: I read somewhere and have since found it to be tried and true... however you boil your eggs, add a bit of baking soda either just before they're done, or when they are done, and cover for a minute or two. Then, when you peel them, the baking soda will have helped break down the tissue that holds the eggshell on, and they'll come off more easily. It's also easier to peel them while warm, rather than after letting them go cold.
