Anyone have a boffo beef stroganoff recipe?
« on: October 05, 2007, 09:14:06 AM »
My husband is having a serious yen for the beef stroganoff of yore, i.e., his childhood.  I have made two versions that I think were very good but not quite right.  I like to experiment, so it's no great hardship to keep playing with the recipe.  But. I'm starting to think what he remembers is wrapped up in some hearth and home memory that never quite existed...or was made with cream of mushroom soup, and I'm really trying to hard.   :)

So, what do you think?  Shall I break out the cream o' mushroom?

Oh I LOVE beef stroganoff. Here's what I do:

1lb ground beef
1/2 cup chopped onion
1 can cream of mush. soup (make sure it's condensed!)
1/4 cup water
1 tsp paprika
1/2 cup sour cream

Brown the beef with the onions in a little oil, then drain off any fat and stir in the soup and water. Cook until heated through and bubbly, then take off the heat and stir in the paprika and sour cream. Sprinkle parsley on top and serve with noodles.

That sounds about the way I would do it.  I like to serve over "egg noodles" if you can find any.

I also use chicken livers in place of the beef, and my kids actually like it!  I serve the liver stroganoff over rice, though.

And, yeah, your husband is probably remembering a very simple recipe like the one above - those are always the best!

Here's mine:

I think traditionally it's made with brandy or cognac but I always use red wine.

Fry chopped onion & 1 or 2 cloves of crushed garlic.  Add the meat and/or mushrooms, fry until brown.  Add about 1/4 bottle red wine and cook on a high heat til reduced. Stir in sour cream. Voila! Serve on a bed of egg noodles.

nb I have also seen recipes which use a can of chopped tomatoes in place of the alcohol.
