Medium size chicken

Roast for 3 people (including very carnivorous grown up son) and gravy made with the giblets (an 'extra' which you usually only get with free range/organic).
Chicken risotto for 2 (using some of the stock - made with the carcase and the rest of the gravy)
Chicken soup for 2 (using the stock and adding the left over veg from the roast dinner, haricot beans and anything else I have lying around) - (any left to be frozen to add to other soups in the future.)
One more meal for 2 of us with the rest of the chicken (maybe with noodles, or a curry)

The last chicken I bought made:

Roast chicken for two (the DH is super skinny but eats like a horse)
Chicken fajitas for two
And a salad with bits of chicken.  Not bad, but I didnt do the stock thing this time. 

Any good recipe for chicken risotto?
