Becca's (Wishstar's) Baked Bean Recipe - At long last!

Oh alright, you've drug it outta me.  :)

This may be slightly different from the one I sent to Pam and Emily, because I only guestimate measurements but here you go!

Becca's Baked Beans

4-6 slices of streaky bacon, cut into 1/2 inch pieces
1 onion chopped
1 green pepper chopped
2 cans baked beans (I use this recipe with Bush's beans in the US and Heinz here in the UK and it works fine with either.  If using Bush's you may want to increase measurements slightly to account for the larger can size.)
1 cup ketchup
2 tablespoons yellow mustard
1 1/2 tablespoon worcester sauce
1/2 cup packed brown sugar (the darker the better)

Fry the bacon, onion and green pepper over medium heat 5-6 minutes until the bacon gets 'melted' and the onion turns translucent.  (Onion should not get browned.)

Place beans into a cassarole dish, add the bacon mixture, including all the fat and stir well.  Add the remaining ingredients and mix well. 

Cook, covered at 375F/180C for at least 1 1/2 hours, stiring every 30-45 minutes. 

The longer you cook 'em, the better they get!  I've yet to actually mess these up, so don't worry about measurements too much.  Increase or decrease to taste!  :)

I'm not surprised, Caitlinn.  It's dead easy.  :)

The trick really is the cooking it for a long time.  I usualy do them for a good 2-3 hours.  They get all rich and gooey....yummmmmmm!  They go great with so many things....baked potatoes, ribs, potato salad.  May have to make me some this weekend again!   ;D

I take it you chopped the onions and peppers quite finely or do you tend to leave them chunkier?

I actually leave them fairly chunky....probably 1/4 inch, bite sized pieces.  They get cooked so long though that it doesn't matter.  It all gets mushy and gooey together.

  Sounds very yummy Becca :)I just need to get my picky hubby to try it.

   Heinz plain beans arent the only good beans on earth :P

Awww, shucks, Peedal.  :)  Glad you enjoyed them. 

If anyone else tries 'em, I'd love to hear how they turn out for you.  There's a myth in my family that making these beans right is a herieditary thing....but I have a suspicion that that isn't quite true. ;)

I have to say that these beans are the best I think I have ever had.  The flavors meld together in an absolutly heavenly way.  I am not sure what exact measurements I used but ---wow.

Oh hurrah!  I'm glad they worked out so well for you Pam.  They are yummy, aren't they?  I swear the smell of those beans cookin' just brings summer right to me no matter how gray and gloomy it is here in London.  :)

My mother used a recipe almost identical to this, only she would put the beans in a colander and rinse off the orange goop (alleged tomato sauce, haha) and instead of the ketchup, she used a good quality smoky barbecue sauce. She called these "Barbecue Baked Beans," and they are awesome with grilled hamburgers and hot dogs. I inherited the recipe, but haven't tried to make them here. Sounds like a good weekend project. :)
