Saag Aloo and Spinach

Can anyone recommend a good recipe for it?

Hubby likes spinach and as that's about the only greenery he'll eat, I thought I'd try to cook with it.

Any other good spinach recipes more than welcome!

I made a Lamb Korma with spinich and chick peas tonight. Would that appeal to him?

I bought a shoulder of lamb (shank side, it was huge and it cost £3.77) I cut it into cubes, sauteed sliced onions until they were softened and then I fried with the onions a whole jar of Pataks Korma paste, throw that in the slow cooker with a cup of red lentils. Brown off your lamb, fill the korma paste jar with water (shake it up, dump it in the slow cooker with everything else) let that cook for a good 5/6 hours. Maybe 30 minutes before serving stir in a whole bag of fresh spinich and a tin of drained chick peas. Let that cook down. Serve with Pilau rice (recipe on the bbc website) and bobs your uncle! A great meal, a happy man, and leftovers for another night too!!!

That sounds delicious, racheeeee. He's not a big fan of Korma, do you think I can sub a spicier sauce?

Yeah, I think that you could do it with any curry paste!

I do a creamed spinach with lemon and pasta thing which is good and easy. Just steam the spinach, add lemon zest and juice, cream cheese and milk.

I do a sweet potato and aubergine (egg plant to you guys I guess!) curry with spinach in.

cube a large (or 2) sweet potato, cut aubergine to similar size.

Fry chopped onion, garlic and ginger until soft.
Add 1/2 tsp turmeric, 1 tsp garam masala, 1 tsp (well I like it spicy!) cayenne pepper. 1/2 tsp cumin, 1/2 tsp  ground coriander
Cook that a few minutes, then add the potatoes, aubergine and 2 tins of chopped tomatoes.
Let that cook on a medium heat for about 25 minutes until the potato is cooked.
Add a couple of handfuls of spinach and 2 chopped green chillis. Cook until the spinach has wilted down.

Serve with some rice.




Also have a recipe for a low fat lasagne, using chicken, campbells condensed low fat mushroom soup for the sauce and add spinach in to the sauce as well. It is delicious.

I love a spinach and chorizo pasta! I saute a red bell pepper and an onion, sliced from top to bottom, add chorizo that's been cut into bite sized pieces, stir fry until it's all red and juicy, add a bag of washed baby spinach and some green olives (not really necessary but nice) and once the spinach has wilted and been mixed in I serve it over penne. The spinach and the chorizo create a reallly nice sauce. Mmm!

Sorry I don't have exact measures, I totally eyeball this recipe. :)

Coconut Chicken w Spinach

             1/4 cup butter
•   1 1/2 pounds boneless chicken breasts or tenders, cubed
•   1 package (10 ounces) frozen spinach
•   1/2 cup coconut milk
•   1 large clove garlic, minced
•   salt and pepper
•   slivered toasted almonds, optional
PREPARATION:
Heat onion in a large skillet and add chicken; stir fry until chicken is white and cooked through. Cook spinach with coconut milk; add to chicken. Season with salt and pepper and garnish coconut chicken with nuts.

This is the one I'm trying first! Pretty straight-forward and looks simple enough. :)

I just wanted to clarify: when you say "heat onion" do you mean "heat garlic?"
