Not sure what to make
« on: April 17, 2008, 08:56:20 PM »
I have a girls night coming up with about 5-7 of us.  We are supposed to bring one savory dish and one sweet.  I have the sweet taken care of, but for the life of me I don't know what to make for the savory.  I asked if there were any dislikes and the only thing someone mentioned was fish.

So I'm hoping people will have ideas for me.  Simple to make and enough for five. (Two women might not come, plus there will be at least five other dishes)

Thank you.

I saw this on  Tamasin Day Lewis' show, it looked so good & quite simple to make.  I keep meaning to make it.

I made this Almond Chicken Salad with Asparagus for dinner the other night and it was really good. I added a bit of left over pasta that I had and some chopped red onion. DF loved it too.

Oh yeah, it's very healthy and low fat too!

Another salad idea - taco salad?
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

How about soup? I made Gordon Ramsey's butter bean, chorizo and red onion soup tonight, definately a company dish; it's quick (like 20 minutes) and really super delicious.

Unfortunately I can't find the recipe on the internet. If you want it I can post it for you.

As you wish!  It's all about the dressing.  I could eat that dressing on just about anything.

CHINESE CHICKEN SALAD

lettuce, enough for large salad
2-3 chicken breasts, cooked and cooled
mandarin orange slices, drained
almond slices
Maifun noodles (some people call them rice sticks)

DRESSING
1/2 tsp dry mustard
2 Tbsp sugar
2 tsp soy sauce
1Tbsp sesame oil
1/4 cup vegetable oil
3 Tbsp rice vinegar

Pour oil into pan about 3" deep.  Heat to 375°-400°.  Break Maifun into small portions about 3" long.  Dip a portion into the hot oil – it will puff in a few seconds.  Use 2 spoons and turn over so all noodles cook evenly.  Remove as soon as it stops crackling and place on paper towel to drain.
NOTE: Remove all small pieces from oil to prevent burning and smoking.

Combine dry mustard, sugar, soy sauce, sesame oil, salad oil, and rice vinegar.  Shake well.

Shred lettuce into salad bowl.  Shred cold chicken and add to bowl.  Add mandarin oranges and almond slices to bowl.  Top with fried Maifun.  Pour prepared dressing over mixture and mix gently.  Ready to serve.

lasagne?
Lasagne is always a good choice, and it's easy to make, especially if they sell those really good flat noodles that you don't have to boil first.

A quiche maybe? I have a bacon and spinach one and also a crab one. Both are pretty simple and very yummy.

Or the Bacon and Cheese puff appetizers I posted the other day are very simple and last weekend I changed it around and made some with crab and dill.

let me know if you'd like any of the recipes.

Sure!

6 large eggs
1 1/2 cups heavy cream
salt and pepper to taste
2 cups fresh spinach, chopped and packed
1 pound bacon, cooked and chopped into bits
1 1/2 cup swiss cheese, shredded
1 9" pastry crust fitted in a 9" pie plate. ( I use refrigerated pie crusts, but if you have a recipe you like you can make your own.)
Directions:
Combine eggs, cream, salt and pepper with mixer.

Layer the spinach, bacon and cheese in the bottom of the pie crust.

Pour egg and cream mixture over top.

Bake at 375 degrees 35 to 45 minutes until set.

There's a picture of it here. It really is easy.
