Help! Blueberry Cobbler, Fresh May 08
« on: May 12, 2008, 05:31:28 PM »
Tesco has blueberries on sale for £1 per container, so I thought I'd make this cobbler.  Trouble is that I only have low fat pouring cream and for the cobbler it says you need 130ml double cream.  They aren't requiring the double cream be beaten until stiff, just mixed with eggs.

Think I can get away with it?

I'd think so Cait... does the recipe call for butter or oil?  You might be able to add a bit of fat to make up for the higher content in double cream.

I do this all the time and it works okay. :-) We almost always have 2% on hand so I add a tbsp or so of oil/butter to make up for recipes that call for whole milk like pancakes, waffles and muffins.

Thanks Peeps!  Yes, it does call for fat: 75g cold diced butter to 175g flour.  Perhaps a bit extra butter?

Yep... I think about 25 grams would do it.

Ha-ha!  Should post the piccie from the magazine.  But seriously, camera is packed away due to the much upheaval of a boiler install!  "Oh, the joy", she says.  Hence the comfort food.

Turned out rather nice!  :D

I'm glad! I thought in hindsight I should have said to add the melted butter or oil to the wet ingredients as adding them to the dry might have had a detrimental effect on the dough.  Still cobblers are rather forgiving.

Oh, I live with my Salter kitchen scale!  It came with me!

I love cobbler, but mine is just fruit and biscuit on top.  I bought four boxes of the blueberries, but plan on just eating them.  I love blueberries even more.
